Summer. The season of fresh fruits and the pleasure of enjoying every day simplicity.
I took a visit up to my sister in laws house and this amazing tree she has in her front yard was fully covered in beautiful golden apricots. The boys were picking them and using them as bombs toward each other and they got extra points if the fruit opened up on them. But I saw sunshine dripping from the limbs and knew that baking with these little pockets of sun would have to be delicious.
A little back story to 8 years ago. We were living in Idaho and I had found a tree orchard and they welcomed the public to come pick apples. On this adventurous day, I gathered up my family to go pick apples together. Then I had this amazing idea of canning some of these 20 lbs of apples we just picked. So hubby went to the store to buy all the canning supplies. Here is where it gets a little humorous. I have never tasted a canned food that I like. But this was a great opportunity for me to make applesauce for the kids and apple butter for hubby. We had more sauce and butter than I knew what to do with it. The next month, I got rid of all my canning supplies because who was I kidding this was a lot of work and no way our family would ever get through 50 cans of apple mush.
Ok now fast forward. This beautiful apricot tree was in full bloom and I knew I had to make something out of these little things. So I picked enough to fill a bag and let my mind and fingers do an internet search on apricot desserts and jam.
I was not fully prepared for the jam part as I got rid of all my canning stuff back in the apple catastrophe so I had to get really creative. And since I did not stock my cupboard with baking supplies me and my little apron were going to have to get really creative!
Now for the fun part – getting messy and creating a taste bud surprise. This recipe is not meant for it to be stored in a traditional canning way- you get to eat this delicious stuff right away which by the way, it goes incredibly good with ice cream.
I dare you to put on your cutest apron, pick some fruit and make a home-made dessert or treat. It will make you happy!
